Ingredients

Meat sauce

  • 2 tablespoons olive oil
  • 1 large onion, finely chopped
  • 2 cloves garlic, crushed
  • 1kg ground lean beef or lamb
  • 500g ripe Roma tomatoes
  • 3 tablespoons tomato paste
  • ½ cup white wine
  • 3 tablespoons chopped parsley
  • 1 teaspoon sugar
  • 1 teaspoon ground cinnamon
  • salt and freshly ground pepper

Layers

  • 3-4 medium eggplants
  • 3-4 medium potatoes (about 600g)
  • olive oil
  • 1/4 cup Kefalograviera cheese

Béchamel sauce

  • 90g butter
  • 5 tablespoons plain flour(75g)
  • 800ml milk
  • ¼ teaspoon ground nutmeg
  • ¼ cup grated Kefalograviera cheese (or parmesan)
  • 2 eggs, lightly beaten
  • salt and pepper
