Arugula & Beef Mini Empanadas

Ingredients

    Dough =
    2 cups Whole Wheat Flour
    1/2 cup Reduced Sodium Beef Broth, cold
    2 tbsp Unsalted Butter, cold
    Pinch of Sea Salt
    Pinch of Black Pepper
    Chopped Cilantro

    Filling =
    1/2 package (about 10 oz) 93% Lean Ground Beef
    2 cups Arugula
    2 Garlic Cloves, diced
    1 Roma Tomato, diced
    1 Jalapeno, de-seeded and diced
    1 Large Egg, beaten for egg wash
    1/2 Sweet Vidalia Onion, diced
    2 tbsp Part Skim Shredded Colby-Jack Cheese (or any preferred cheese)
    1 tbsp Honey
    1 tsp Allspice
    1 tsp Cumin
    1 tsp Chili Powder
    1 tsp Extra Virgin Olive Oil
    1/4 tsp Cayenne Pepper
    Pinch of Cinnamon
    Pinch of Black Pepper
