Ingredients
For the Pork Tikka
- 2 TBSP olive oil
- 1 kg pork fillet cut into slices
- 1 large brown onion (200g) sliced thinly
- 2 cloves garlic, crushed
- 1 TSP ground cumin
- 1/3 Cup (100g) Tikka Masala Paste
- 1 Cup (250ml) light coconut milk
- 1 Cup (250ml) chicken stock
- 1/2 Cup (175ml) light sour cream
- 1 250g packet frozen spinach thawed and excess moisture removed
- 1/2 Cup coarsely chopped fresh coriander
For the Fruity Spiced Rice
- 2 Cups (400g) basmati rice
- Water*
- 1 Fresh apricot chopped (or two pieces dried apricot chopped)
- 4 Dates chopped
- 1 TBSP Raisins chopped
- 2 TBSP Blanched almonds toasted and sliced in half lengthways
- Pinch each of Turmeric, cardamom powder, ground coriander, cumin seeds and saffron threads.
- Salt to taste
Description
A Quick To Prepare Midweek Meal. For The Rice I Use A Rice Cooker, Which Requires Equal Quantity Of Water To Rice. Cook Rice In Watever Method You Prefer.
