Pork Tikka And Fruity Spiced Rice

Ingredients

For the Pork Tikka

  • 2 TBSP olive oil
  • 1 kg pork fillet cut into slices
  • 1 large brown onion (200g) sliced thinly
  • 2 cloves garlic, crushed
  • 1 TSP ground cumin
  • 1/3 Cup (100g) Tikka Masala Paste
  • 1 Cup (250ml) light coconut milk
  • 1 Cup (250ml) chicken stock
  • 1/2 Cup (175ml) light sour cream
  • 1 250g packet frozen spinach thawed and excess moisture removed
  • 1/2 Cup coarsely chopped fresh coriander

For the Fruity Spiced Rice

  • 2 Cups (400g) basmati rice
  • Water*
  • 1 Fresh apricot chopped (or two pieces dried apricot chopped)
  • 4 Dates chopped
  • 1 TBSP Raisins chopped
  • 2 TBSP Blanched almonds toasted and sliced in half lengthways
  • Pinch each of Turmeric, cardamom powder, ground coriander, cumin seeds and saffron threads.
  • Salt to taste

Description

A Quick To Prepare Midweek Meal. For The Rice I Use A Rice Cooker, Which Requires Equal Quantity Of Water To Rice. Cook Rice In Watever Method You Prefer.
