Arrosto Misto With Tangy Lemon And Olive Salsa

Ingredients

For the Arrosto Misto:

  • 6 boned chicken thighs
  • 6 very thin slices of proscuitto
  • 4 x 2 com thick slices of stale ciabatta halved
  • 8 thick chorizo sausages
  • 200ml dry white wine
  • 3 tbsp olive oil
  • sea salt and black pepper
  • 8 whole garlic cloves,unpeeled
  • 500g potatoes, peeled and cut into 2 cm chunks
  • 6 sprigs of rosemary, plus extra for serving
  • 6 sprigs of thyme

For the stuffing:

  • 100ml milk
  • 2 thick slices ciabatta, crusts removed
  • 1 tbspn chopped parsley
  • 1 tbspn chopped sage
  • 2 garlic cloves, crushed with sea salt
  • 1 tsp fennel seeds

 For the tangy lemon and olive salsa:

  • 1 tbspn EVOO 1 tbspn salted capers,
  • rinsed 3 lemons, peeled and sliced
  • 1/4 cup sliced green olives (I like the large Sicilian green olives)
  • 1 tspn caster sugar
