Ingredients
For the Arrosto Misto:
- 6 boned chicken thighs
- 6 very thin slices of proscuitto
- 4 x 2 com thick slices of stale ciabatta halved
- 8 thick chorizo sausages
- 200ml dry white wine
- 3 tbsp olive oil
- sea salt and black pepper
- 8 whole garlic cloves,unpeeled
- 500g potatoes, peeled and cut into 2 cm chunks
- 6 sprigs of rosemary, plus extra for serving
- 6 sprigs of thyme
For the stuffing:
- 100ml milk
- 2 thick slices ciabatta, crusts removed
- 1 tbspn chopped parsley
- 1 tbspn chopped sage
- 2 garlic cloves, crushed with sea salt
- 1 tsp fennel seeds
For the tangy lemon and olive salsa:
- 1 tbspn EVOO 1 tbspn salted capers,
- rinsed 3 lemons, peeled and sliced
- 1/4 cup sliced green olives (I like the large Sicilian green olives)
- 1 tspn caster sugar
