Ingredients

  • 1 long piece eye- or scotch fillet beef (approx 1 ½ kilos) trimmed to make a neat, even strip.
  • 2-3 tbsp oil
  • 10 sheets fresh Filo pastry
  • 100g salted butter melted
  • 1/3 cup brandy
  • 300g good quality aromatic pate` (goose or chicken liver or even mushroom)
  • 1 egg white beaten
