Ingredients
- 60g dried egg noodles
FOR THE STOCK:
- 500- 600ml beef or chicken stock (or boiling water and concentrate/cube)
- 2 teaspoons soy sauce
- 1 cm piece fresh ginger
- Quarter to half a teaspoon (or to taste) dried chilli flakes
- Quarter teaspoon ground cinnamon
- 1 garlic clove, smashed but whole
FOR THE BEEF:
- 125g steak
- 2 teaspoons soy sauce
- Quarter teaspoon ground cinnamon
- 1 cm ginger
- 1 clove garlic, crushed or minced
- 1 teaspoon sugar
- 1 teaspoon Piri Piri or chili sauce
FOR THE SOUP AS A WHOLE:
- 50g sugar snaps
- 75g pak choi or baby pak choi, chopped
- Handful Thai basil, to yield about a couple of tablespoons or so when chopped
- Equal amount coriander/ cilantro
