Aromatic Chilli Beef Noodle Soup

Ingredients

  • 60g dried egg noodles

FOR THE STOCK:

  • 500- 600ml beef or chicken stock (or boiling water and concentrate/cube)
  • 2 teaspoons soy sauce
  • 1 cm piece fresh ginger
  • Quarter to half a teaspoon (or to taste) dried chilli flakes
  • Quarter teaspoon ground cinnamon
  • 1 garlic clove, smashed but whole

FOR THE BEEF:

  • 125g steak
  • 2 teaspoons soy sauce
  • Quarter teaspoon ground cinnamon
  • 1 cm ginger
  • 1 clove garlic, crushed or minced
  • 1 teaspoon sugar
  • 1 teaspoon Piri Piri or chili sauce

FOR THE SOUP AS A WHOLE:

  • 50g sugar snaps
  • 75g pak choi or baby pak choi, chopped
  • Handful Thai basil, to yield about a couple of tablespoons or so when chopped
  • Equal amount coriander/ cilantro
