Ingredients
- 200 g egg noodles, cooked as per packet instructions
- 1 packet baby spinach leaves, roughly shredded
- 1 red and 1 yellow pepper, roasted and cut into strips (or use from a jar)
- 1 ready cooked chicken, skin and bone removed and cut into pieces
- 100g caramelised nuts, chopped a little
- 1 sliced avocado
- 1 fresh mango diced
Dressing:
- 15 ml finely chopped ginger in syrup
- 45 ml red wine vinegar
- 15 ml sugar
- 45 ml soy sauce
- 2 ml mustard
- 15 ml sesame oil
- 80 ml olive oil
- 60 ml chopped coriander
- 30 ml grated fresh ginger
