Asian Chicken Salad

Ingredients

  • 200 g egg noodles, cooked as per packet instructions
  • 1 packet baby spinach leaves, roughly shredded
  • 1 red and 1 yellow pepper, roasted and cut into strips (or use from a jar)
  • 1 ready cooked chicken, skin and bone removed and cut into pieces
  • 100g caramelised nuts, chopped a little
  • 1 sliced avocado
  • 1 fresh mango diced

Dressing:

  • 15 ml finely chopped ginger in syrup
  • 45 ml red wine vinegar
  • 15 ml sugar
  • 45 ml soy sauce
  • 2 ml mustard
  • 15 ml sesame oil
  • 80 ml olive oil
  • 60 ml chopped coriander
  • 30 ml grated fresh ginger
