Ingredients
SALAD:
- 1 carrot, finely julienned
- 4 spring onions, diagonally sliced
- Handful of bean shoots
- 1 cucumber, peeled, de-seeded and sliced into half moons
- Handful of finely sliced iceberg lettuce
- Big bunch of roughly chopped coriander
- Handful of chopped Vietnamese mint, or normal mint if you can't get Vietnamese mint
- Handful of raw unsalted cashews
- You can add other salad ingredients if you like - whatever takes your fancy - slices of red capsicum, snow peas etc
- Vermicelli rice noodles (optional)
- 1 chicken breast, skin off (optional)
Dressing:
- These quantities are a bit sketchy, start with the below and modify to your taste - it sort of depends on how juicy your limes are. You may need more dressing if you use the noodles as they tend to soak up dressing.
- 1 red chilli, chopped
- Juice of 1-2 limes
- 2 TB brown sugar
- 2 TB rice wine vinegar
- 1-2 TB fish sauce
- 1 clove garlic, finely chopped
