- 200g risotto rice, such as Arborio or Carnaroli.
- 1 onion, finely chopped
- 2 garlic cloves, finely chopped
- 1/2 red chilli, seeds removed, finely chopped (optional)
- 2 tablespoons olive oil
- 2 tablespoons butter
- 100g mushrooms, sliced
- 1 pint (500ml) chicken stock
- 1 teaspoon salt
- 1/2 teaspoon ground black pepper
- 50g grated parmesan
- 50g grated fontina cheese
- 75g frozen peas
- 75g frozen king prawns
- 2 tablespoons chopped fresh parsley
