Mushroom Risotto

Ingredients

  • 200g risotto rice, such as Arborio or Carnaroli.
  • 1 onion, finely chopped
  • 2 garlic cloves, finely chopped
  • 1/2 red chilli, seeds removed, finely chopped (optional)
  • 2 tablespoons olive oil
  • 2 tablespoons butter
  • 100g mushrooms, sliced
  • 1 pint (500ml) chicken stock
  • 1 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • 50g grated parmesan
  • 50g grated fontina cheese
  • 75g frozen peas
  • 75g frozen king prawns
  • 2 tablespoons chopped fresh parsley
