Ingredients
2 lbs. Boneless skinless chicken breast2 tbsp. Olive oil
1 Medium bell pepper, cut into short strips
1 Medium onion, sliced
1 clove Garlic, chopped
1 Large can diced green chiles
2 Large Anaheim or Pasilla peppers, cut into short strips
1 tsp. Cayenne pepper
1 tsp. Chile powder
1 tbsp. Ground cumin
6 cups Chicken stock (or I used 4 cups stock, 2 chicken bouillon cubes and 2 cups water)
3 cans Cannellini beans (white kidney beans), rinsed and drained
Salt and pepper to taste
For garnish:
Crushed tortilla chips
Sour cream
Grated cheese
Chopped cilantro
