2 Scallions, finely chopped. whites and greens separated
1 large egg
8 Thin chicken breast cutlets, 1 1/4-1 1/2 lb
1/2 c Sliced almonds
1/2 c Plain bead crumbs
1/4 tsp Grated or ground nutmeg
Salt and pepper
3 Tlb Extra Virgin Olive Oil
1 lb Asparagus, tough ends trimmed
1/2 c (1stick) cold butter, cut into pieces
