1 Onion and 3 garlic cloves chopped
3tsp Mild curry powder (or3/4 tsp tumeric,3/4tsp ground coriander, 3/4 tsp cumin 1/4 tsp ginger)
1/2 tsp Cinnamon
3 Carrots coarsley chopped
1--14-16 oz, Can chopped tomatoes with juice
3/4 c. Chicken broth
1--can Unsweetened coconut milk
1 1/2 cups Chopped fresh pineapple (or 1 i6 oz can pineapple chunks drained)
1/2 bag Frozen peas
2 tbsp Fresh minced parsley
2 Tbles corn starch mixed with 1/4 c water
