Stuffed Pork Chops

Ingredients

For the brine:
1/2 cup Brown sugar
1/2 cup Salt
2 cups Apple cider
1 Large sprig fresh thyme
1 tsp. Peppercorns
2 tbsp. Honey
2 cups Ice
Water
For the stuffing:
1 package Jiffy corn bread mix – any brand is fine, but this one makes about 6 big muffins and that’s what we need
1 Egg
1/3 cup Vegetable oil
1-2 cups Chicken stock
1/2 Onion, chopped
8 oz. Butter (1 stick)
1/2 cup Mixed dried fruits, chopped
1 tbsp. Fresh sage, chopped
1 tbsp. Fresh thyme, chopped
4 Pork chops, bone-in, extra thick
