• 1kg peeled potatoes, halved
• 4 good-quality pork loin chops, skin and fat on
• olive oil
• a small bunch of fresh sage, leaves picked
• a large bunch of watercress
• 300ml milk
• 2 bay leaves
• a sprig of fresh parsley, chopped
• 4 spring onions, thinly sliced
• a little melted butter, to serve
