- 3 roma tomatoes - peeled, seeded and chopped
- 1 lime, zested and juiced
- 1 jalapeno pepper, seeded and finely chopped
- 1 tablespoon minced fresh ginger root
- 1/4 cup chopped fresh cilantro
- 1 teaspoon kosher salt
