Pan-fried Polenta with Corn, Kale and Goat Cheese

Ingredients

  • 4 1/3 cups water
  • 1 cup stone ground cornmeal
  • 1/2 teaspoon salt
  • 1 1/3 cups fresh corn kernels
  • freshly ground black pepper
  • 2 tablespoons grated Parmesan cheese
  • 1/2 bunch kale
  • 1 tablespoon olive oil
  • 1 tomato, sliced
  • 3 ounces goat cheese

Description

Fancy, Fancy Polenta. First The Corn And Parmesan Polenta Is Whipped Up. Then The Polenta Is Cut Into Triangles, Fried, Topped With Thick Slices Of Tomato And A Sprinkling Of Chevre And Broiled. This Glorious Triangle Is Served On A Bed Of Kale.
