Light olive oil or vegetable oil 4 shallots, finely sliced into rings Leaves picked from 1 small bunch of fresh thyme, roughly chopped 25 g caster or granulated sugar 5 tbsp balsamic vinegar 200 g couscous 1/2 tsp fine salt 400 ml boiling water, or chicken or vegetable stock 25 g unsalted butter 100 g walnut halves or pieces 2 tbsp walnut oil or olive oil Sea salt and freshly milled black pepper
