Ingredients
- 4 angel hair pasta nests (I use De Cecco brand)
- 2 tablespoons butter, melted
- 2 tablespoons panko or plain dry breadcrumbs
- 2 tablespoons parmesan cheese, shredded
- olive oil
- salt and ground black pepper
- VEGETABLES:
- 1 large red bell pepper, seeded and cut into strips
- 4 large portobello mushroom caps, halved and sliced (I remove the gills too)
- 1 zucchini, cut into strips about the same size as the red pepper
- 1 large clove garlic, chopped
- olive oil
- salt and ground black pepper
- SAUCE:
- 1 tablespoon butter
- 1 shallot, peeled and chopped
- 1 large clove garlic, peeled and chopped
- 2 cups half and half
- 1/2 cup milk
- 4 tablespoons parmesan cheese, shredded
- salt and ground black pepper
Description
I'm Not Sure Where I Aquired This Recipe, But It Makes A Wonderful "meatless" Meal As Well As An Out Of The Ordinary Way To Begin A Festive Meal. Don't Be Put Off By The Long List Of Ingredients. It's Really Quite Simple To Make.
