Pasta Nests With Vegetables And Garlic Cream Sauce Recipe

Ingredients

  • 4 angel hair pasta nests (I use De Cecco brand)
  • 2 tablespoons butter, melted
  • 2 tablespoons panko or plain dry breadcrumbs
  • 2 tablespoons parmesan cheese, shredded
  • olive oil
  • salt and ground black pepper
  • VEGETABLES:
  • 1 large red bell pepper, seeded and cut into strips
  • 4 large portobello mushroom caps, halved and sliced (I remove the gills too)
  • 1 zucchini, cut into strips about the same size as the red pepper
  • 1 large clove garlic, chopped
  • olive oil
  • salt and ground black pepper
  • SAUCE:
  • 1 tablespoon butter
  • 1 shallot, peeled and chopped
  • 1 large clove garlic, peeled and chopped
  • 2 cups half and half
  • 1/2 cup milk
  • 4 tablespoons parmesan cheese, shredded
  • salt and ground black pepper

Description

I'm Not Sure Where I Aquired This Recipe, But It Makes A Wonderful "meatless" Meal As Well As An Out Of The Ordinary Way To Begin A Festive Meal. Don't Be Put Off By The Long List Of Ingredients. It's Really Quite Simple To Make.
