Pasta Quattro Formaggio Con Prosciutto E Cavolfiore Recipe

Ingredients

  • • 300g (about 10.5oz) cheddar cheese, grated.
  • • 300g (about 10.5oz) gruyere cheese, grated; could sub Swiss?
  • • 300g (10.5oz) mozzarella cheese, grated.
  • • 100g (about 3.5oz) parmesan cheese, grated. Don’t know how much of the dried stuff. To taste.
  • • 250g (about 1/2lb) sugar cured ham, diced medium; more or less to taste.
  • • 500g (about a pound) of pasta of choice. I used spirals but elbow would do.
  • • ½ tsp basil, to taste.
  • • ½ tsp cilantro or parsley.
  • • ½ tsp paprika, to taste.
  • • 1/2 stick of butter, divided; ± to taste.
  • • 1/3 cup milk.
  • • 1 large head cauliflower; cut into medium florets.
  • • salt & FG pepper to taste, all around.
