Basil Rathbone-less Chicken With Triple Pesti Recipe

  • About ¾ cup of olive oil
  • Half a cup of grated parmesan cheese
  • salt, pepper
  • ---SUNDRIED tomato “PESTO”----
  • 1 cup of sundried tomatoes
  • Half a cup of light, toasted walnuts
  • Half a cup of olive oil
  • Half a cup of flat leafed parsley
  • Half a cup of very, very finely chopped scallions
  • 1 cup of sweet red wine
  • Half a cinnamon stick
  • 4 tbls. of thyme honey
  • ---garlic PESTO—
  • 12-16 large cloves of fresh garlic
  • ¾ cup of toasted skinless almonds
  • Half a cup of olive oil
  • The juice of a big fat lemon
  • Half a cup of very firm dry feta cheese.
