- 1 lb beef stew meat (chuck)
- 6 cloves garlic, minced
- 8-10 small red potatoes, cubed
- 1 cup green onions, chopped
- 4 small tomatoes, chopped (I used kumato)
- 1/2 lb baby carrots
- 1/2 lb button mushrooms
- 1 1/2 cup corn
- 1 1/2 tsp salt
- 1/2 tsp white pepper
- crushed red pepper flakes, to taste
- 1 tsp allspice
- 4 small bay leaves
- 1 tsp cumin
- 1 tsp cinnamon
- 1 1/2 tsp celery seed
- 1 tbsp brown sugar
- 1/3 cup red wine
- 3 cups beef stock
- If thickening is needed:
- 1/4 cup water
- 1/4 cup flour
