- 1/4 cup diced red bell pepper
- 1 tbsp finely chopped jalapeno
- 2 cups shredded rotisserie chicken
- 3 tbs chopped cilantro
- 1/2 tsp salt
- 1/2 tsp cumin
- 1/4 tsp black pepper
- 1 can (14 1/2 oz) diced tomatoes with green chilies
- Crust
- 1 egg
- 1 (7 oz) package sweet yellow cornbread
- 1/2 cup milk
- 3/4 cup crushed corn tortilla chips
- Toppings
- 1/2 cup shredded mozzarella cheese
- 1/2 cup shredded cheddar cheese
- shredded romaine lettuce
- chopped tomatoes
Description
This Is A Great Chicken Recipe. The Mixture Is Moist And Flavorful! I Use More Cilantro Than Called For, But I Love Cilantro. We Also Use The Chicken For Chicken Salad, In Tacos, And Enchiladas.
