- 3 Tbs oil
- 3 tomatoes,sliced
- 2 avocados,peeled and sliced
- mornay sauce
- parmesan cheese,fresh grated
- Mornay sauce:
- 4 Tbs butter
- 4 Tbs flour
- 2 c milk,scalded
- salt and white pepper
- 2 egg yolks
- 1/4 c cream
- 1/2 c fesh parmesan cheese or blend of 1/4 c parmesan and 1/4 c swiss cheese
