- 1 package active dry yeast
- 1 teaspoon honey (or sugar)
- 1 cup warm water
- 1 Tbsp sea salt
- extra virgin olive oil
- 1 cup whole wheat flour
- 2 cups bread flour
- for the pesto
- about 1 cup chopped fresh basil
- 1 cup shredded or shaved parmesan
- 1/2 cup pine nuts
- 3-4 cloves garlic, coarsely chopped
- salt & black pepper, to taste
- about 1/2 cup olive oil
- toppings
- 1 large handful sweet grape tomatoes, halved long-ways
- about 12 1/2 inch thick slices fresh mozzarella
- shredded or shaved parmesan (as much as you want!)
