Caesar Club Sandwich Recipe

Ingredients

  • 2 split (1 whole) chicken breasts, cooked any way (grilled, baked, poached, etc), sliced thickly
  • 4 ounces proscuitto
  • 1 large garlic clove, smashed and coarsely chopped
  • 2 Tablespoons chopped fresh parsley
  • 1 1/2 teaspoons anchovy paste
  • 1 teaspoon Dijon mustard
  • 1 1/2 Tablespoons freshly squeezed lemon juice
  • 1/2 cup plain Greek yogurt, or mayonnaise
  • 1 large ciabatta loaf
  • 2 ounces baby arugula, washed and spun dry
  • 2-3 ounces Parmesan, shaved
