- 4 ounces proscuitto
- 1 large garlic clove, smashed and coarsely chopped
- 2 Tablespoons chopped fresh parsley
- 1 1/2 teaspoons anchovy paste
- 1 teaspoon Dijon mustard
- 1 1/2 Tablespoons freshly squeezed lemon juice
- 1/2 cup plain Greek yogurt, or mayonnaise
- 1 large ciabatta loaf
- 2 ounces baby arugula, washed and spun dry
- 2-3 ounces Parmesan, shaved
