Ingredients
- 4 eggs
- 1 1/4 C. vegetable oil (I use Crisco baking sticks)
- 2 C. sugar
- 2 t. vanilla extract
- 2 C. flour
- 2 t. baking soda
- 2 t. baking powder
- 1/2 t. salt
- 2 t. cinnamon
- 3 C. grated carrots (I use the mini chopper or food processor)
- 1 C. Chopped walnuts (I use about 1/2 cup, adjust to your own taste)
- 1/2 C. butter, softened
- 8 oz. cream cheese, softened
- 4 C. powdered sugar
- 1 t. vanilla extract
