- 3 pound pork belly

- 1/4 cup mixed fresh herbs finely chopped
- 8 ounces fine breadcrumbs
- 1 egg beaten
- 1/2 teaspoon salt
- 1/2 teaspoon freshly ground black pepper
- Spicy Paste:
- 2 tablespoons melted butter
- 2 tablespoons chutney
- 1 tablespoon lemon juice
- 2 cloves garlic crushed
- 2 tablespoons Guinness flavored mustard
- Sauce:
- 2 large cooking apples peeled cored and chopped
- 1 medium white onion peeled and chopped
- 2 garlic cloves
- 2 sprigs thyme
- 1/4 pint sweet white wine
- 1/4 pint chicken stock
- 1/2 pint heavy cream
