Peach Shortcake Recipe

Ingredients

  • angel food cake (great recipe posted on RecipeZaar)
  • 1 cup cake flour (sift several times)
  • 3/4 cup sugar
  • 2 tbsp sugar
  • 12 large egg whites
  • 1 1/2 tsp cream of tarter (make sure fresh)
  • 1/4 tsp salt
  • 3/4 cup sugar
  • 1 1/2 tsp vanilla
  • 1/2 tsp almond extract
  • Use a two piece anglefood cake pan if possible. Preheat oven to 375.
  • Sift together cake flour and 3/4 cup sugar plus 2 tsp. Set aside.
  • Combine the two extracts in small bowl. Set aside.
  • Beat egg whites, cream of tarter, and salt until peaks form.
  • Add other 3/4 cup sugar slowly, then beat until stiff peaks.
  • Beating on LOW, add flour mixture and extracts slowly. Make sure to fold in bottom and sides of bowl.
  • Add batter to UNGREASED pan. Move knife thru batter to remove air pockets. Bake 30 - 35 minutes until top springs back when touched.
  • Cool completely on rack. Spank outside of pan, do not use knife, to remove cake.
