- 2 ten-ounce cans of red enchilada sauce
- 2 small cans of mild or medium (or hot, if desired) green chilis, cut in strips
- 1 onion, chopped
- 1 tsp fresh cilantro, chopped
- OPTIONAL- cayenne pepper, or Tabasco or other hot sauce, to taste
- salt, if needed
- monterey jack cheese, shredded
- flour tortillas, slightly warmed
- 2 tsp fresh scallions, sliced
