Chocolate Dipped Caramallows Recipe

Ingredients

  • FOR THE caramel LAYERS

  • 4 cups heavy cream
  • 4 cups sugar
  • 2 cups light corn syrup
  • 6 ounces (1 1/2 sticks) unsalted butter
  • 1 1/2 teaspoons salt
  • 1 teaspoon pure vanilla extract
  • FOR THE marshmallow LAYER
  • 2 1/2 teaspoons unflavored gelatin (one 1/4 ounce envelope)
  • 1/3 cup plus 1/4 cup cold water
  • 1 cup sugar
  • salt
  • FOR FINISHING candies
  • Tempered chocolate
  • White nonpareils, for sprinkling
