Ingredients
- 2 aubergines (eggplants), sliced into 1/2 inch slices, salted and left to drain for 30 minutes, then patted dry
- 6 medium potatoes, peeled and sliced into 1/2 inch rounds
- 1 medium onion, finely chopped
- 500 g lamb mince (ground) - can substitute beef
- 150 ml red wine
- 1 can crushed tomatoes
- 1 tsp cinnamon
- 1 tsp oregano
- 3 garlic cloves, minced
- handful chopped parsley
- salt
- pepper
- olive oil
- 75 g butter
- 75 g flour
- 750 ml milk
- 50 g parmesan, grated
- 100 g gruyere, grated - or other flavourful cheese
- 2 egg yolks + 1 whole egg
