Moussaka Recipe

Ingredients

  • 2 aubergines (eggplants), sliced into 1/2 inch slices, salted and left to drain for 30 minutes, then patted dry
  • 6 medium potatoes, peeled and sliced into 1/2 inch rounds
  • 1 medium onion, finely chopped
  • 500 g lamb mince (ground) - can substitute beef
  • 150 ml red wine
  • 1 can crushed tomatoes
  • 1 tsp cinnamon
  • 1 tsp oregano
  • 3 garlic cloves, minced
  • handful chopped parsley
  • salt
  • pepper
  • olive oil
  • 75 g butter
  • 75 g flour
  • 750 ml milk
  • 50 g parmesan, grated
  • 100 g gruyere, grated - or other flavourful cheese
  • 2 egg yolks + 1 whole egg
