Southwestern Seafood Salad Recipe

Ingredients

  • 3 plum tomatoes cored
  • 1/2 cup dry white wine
  • 2 bay leaves
  • 1/2 pound shrimp peeled and deveined
  • 1/2 pound scallops
  • 2 cups orzo cooked according to package directions and drained
  • 16 ounce can black beans drained
  • 1 cup cooked fresh corn
  • 2 tablespoons fresh lime juice
  • 2 tablespoons chopped fresh parsley
  • 2 tablespoons chopped fresh cilantro
  • 1/2 teaspoon salt
  • 1 teaspoon freshly ground black pepper
  • 1/2 teaspoon cayenne pepper
