  • 1/2 cup plus 2 tablespoons chopped cilantro
  • 1/2 cup plus 1 tablespoon chopped mint
  • kosher salt and freshly ground pepper
  • 1 1/2 cups Japanese panko or plain dry bread crumbs
  • 2 tablespoons fresh lemon juice
  • 2 tablespoons fresh lime juice
  • 2 tablespoons unseasoned rice vinegar
  • 1 teaspoon sugar
  • 1/2 small green cabbage, shredded
  • 1 small cucumber—peeled, halved lengthwise, seeded and julienned
  • 1 small red onion, thinly sliced
  • 1 small red bell pepper, thinly sliced
  • 1/4 cup sesame seeds
  • 1/4 cup vegetable oil
