Chipotle Chicken Burritos Recipe

Ingredients

  • 2-3 Lbs bone in chicken legs & thighs
  • 2 chipotle peppers in Abodo (and 2 Tablespoons sauce)
  • 2 garlic cloves
  • Rice:
  • 1-1/2 Cups Instant white rice
  • 1/2 Cup instant brown rice
  • 1-1/2 Tablespoons chicken bouillon powder
  • 1/2 - 15oz can tomatoes Diced (Blend in blender until smooth, set extra aside)
  • 2 Cups water
  • Avacado Sauce:
  • 1 avocado
  • 3 Tablespoons sour cream
  • 1/2 lime juiced
  • 1 Tspn cumin
  • 1 Tspn garlic powder
  • 1/4 Cup cilantro
  • 1/3 Cup water
  • 1 Tablespoon tomatoes Diced (from extra can above)
  • 6 - 10" tortillas
  • 1-/2 Cups mozzarella cheese
