Ingredients
- 2-3 Lbs bone in chicken legs & thighs
- 2 chipotle peppers in Abodo (and 2 Tablespoons sauce)
- 2 garlic cloves
- Rice:
- 1-1/2 Cups Instant white rice
- 1/2 Cup instant brown rice
- 1-1/2 Tablespoons chicken bouillon powder
- 1/2 - 15oz can tomatoes Diced (Blend in blender until smooth, set extra aside)
- 2 Cups water
- Avacado Sauce:
- 1 avocado
- 3 Tablespoons sour cream
- 1/2 lime juiced
- 1 Tspn cumin
- 1 Tspn garlic powder
- 1/4 Cup cilantro
- 1/3 Cup water
- 1 Tablespoon tomatoes Diced (from extra can above)
- 6 - 10" tortillas
- 1-/2 Cups mozzarella cheese
