Ingredients
- 1 Cup (2 sticks) unsalted butter, room temperature
- 3/4 Cup brown sugar, firmly packed
- 1 Cup Granulated sugar
- 2 eggs, lightly beaten
- 1 tsp vanilla extract
- 2 1/2 Cups AP flour
- 2 Cups Old Fashioned or instant oatmeal, uncooked
- 1 tsp baking powder
- 1 tsp cinnamon
- 1/2 tsp Salt
- 1 Cup dried cranberries
- 1/2 Cup raisins (optional)
- 1/3 Cup dried currants (optional)
- 1/4 Cup coconut (optional, but it adds awesome)
- 1/4 Cup dried apricots, chopped (optional)
- You can even put chopped nuts and/or butterscotch chips up in there if you want. It's your cookie, make it a party!
