Vegetable Jalfrezi Recipe

Ingredients

  • 1 large onion, peeled and chopped
  • 1 tsp. hot chili paste
  • a thumb-sized piece of fresh ginger, minced
  • 2 cloves garlic,minced
  • a small bunch cilantro,rinsed, chopped, stems and all
  • 2 red bell peppers,seeded and chopped
  • 1 cauliflower, broken into florets
  • 3 ripe tomatoes,quartered
  • 1 small butternut squash, peeled, seeded and chopped into inch size chunks
  • 1 15 oz. can chick peas,rinsed and drained
  • vegetable oil
  • a pat of butter
  • 1/2 jar Patak's Jalfrezi curry paste
  • 1 28 oz. can diced tomatoes
  • 1/4 cup balsamic vinegar
  • Freshly ground pepper
