Shrimp Salad Recipe

Ingredients

  • 2 cups enriched polished long grain rice
  • 2 Tbs extra virgin olive oil (evo) for short
  • 1/4 cup apple cider vinegar
  • 1 cup dry red wine
  • 1/4 cup brown sugar
  • zest and juice of 2 lemons
  • 16 oz can of sliced pineapple (save juice) cut in pieces
  • 2 baby carrots shaved
  • 1/4 bag of 250/300 baby shrimp (frozen)
  • 1 cup of raisins cooked and drained
  • 10 grams of microplanned ginger
  • 1/4 tsp ground allspice
  • 1/4 tsp nutmeg
  • 1/2 tsp cinnamon
  • 1 Tbs of black peppercorns
  • 1 Granny smith apple cut in small wedges
  • 1 stick of celery cut in small slices.
  • 1 tsp roated sesame seeds for garnish
