Butternut Squash Bisque With Focaccia "dressing" Recipe

Ingredients

  • For the "dressing":
  • 1 round focaccia loaf (about 10 inches in diameter) cut into cubes
  • 1 large yellow onion, sliced
  • 2 medium celery stalks, chopped
  • 2 medium carrots, peeled & chopped
  • 1 granny smith apple, chopped
  • 2 small garlic cloves, minced
  • 2 cups chicken stock or broth
  • olive oil
  • leaves of 1 fresh rosemary branch, minced
  • leaves of 3-4 fresh sprigs of thyme
  • a handful of fresh parsley, chopped
  • salt & pepper
  • For the bisque:
  • 1 butternut squash, seeded & quartered
  • 1 sweet potato, halved
  • 1 medium yellow onion, coarsely chopped
  • 1/2 rutabaga, peeled & chopped
  • 2 medium celery stalks, chopped
  • 2 medium carrots, peeled & chopped
  • 1 granny smith apple, chopped
  • 1/2 red bell pepper, chopped
  • 2 large garlic cloves, minced
  • 3 cups chicken stock or broth (or vegetable, if you prefer)
  • olive oil
  • 2 tbsp dried thyme
  • salt & pepper

Description

This Creamy Bisque Is Made With Only Vegetables, Herbs & Chicken Stock; It Is Hearty, Flavorful, And Good For You! The "dressing" Is Similar To One I Made Last Thanksgiving. Since I Had A Large Focaccia Loaf That Needed To Be Use
