Hoisin Chicken - South Beach Recipe

Ingredients

  • 3 lbs boneless skinless chicken breast halves, cut into chunks
  • 1/4 c hoisin sauce (I use Whole Foods 365 organic - 3g sugar/serving)
  • 1/4 c sugar free apricot jam
  • 1/4 c low sodium soy sauce
  • 1 small pc ginger root, grated (I've used ground ginger in a pinch)
  • juice of 1 lime
  • 3 T cornstarch
  • salt & pepper to taste
  • 1-2 cloves garlic, minced
