Ingredients
- 3 lbs boneless skinless chicken breast halves, cut into chunks
- 1/4 c hoisin sauce (I use Whole Foods 365 organic - 3g sugar/serving)
- 1/4 c sugar free apricot jam
- 1/4 c low sodium soy sauce
- 1 small pc ginger root, grated (I've used ground ginger in a pinch)
- juice of 1 lime
- 3 T cornstarch
- salt & pepper to taste
- 1-2 cloves garlic, minced
