Ingredients
- 1 c. tiny shell macaroni
- 1 medium eggplant
- 1 small onion
- 3T olive oil
- 3 oz tomato sauce, and I added a few fresh tomatoes for flavor & color
- 1/4 c parsley
- 2 T lemon juice
- 1/2 c halved olives
- basil ( to taste )
- marjoram ( to taste )
- salt, pepper,
- garlic ( to taste )
- 1/2 lb. monterey jack cheese
- 1 1/2 c parmesan cheese ( I used less )
