- 1 five lb. bag of yellow onions, peeled and thinly sliced
- 3 tbsp of unsalted butter

- 4 to 5 sprigs of fresh thyme
- 2 minced cloves of garlic
- 8 to 10 grinds of black pepper
- 1/4 cup of dry vermouth or if you have it brandy
- 2 cups each of low salt chicken broth and beef broth
- 1 tbsp of sugar
- 4 passes of fresh nutmeg on a microplane
- 1/2 to 3/4 cup of grated pamesean cheese
- Thick country style crusty bread
- Good melting cheese, muenster/provolone, emmanthaler, gruyere, taleggio. Whatever floats your boat.
