Ingredients
- 20 oz. Buitoni 3 cheese & spinach tortellini (found in my store's refrigerated section)
- 8 cups chicken stock
- 1 lb lean ground turkey, thawed
- 1 large yellow onion, diced
- 1/2 cup red bell pepper, diced
- 1 large celery rib, diced
- a handful of baby carrots, sliced into rounds
- 1 large roma tomato, diced
- 3 garlic cloves, minced
- zest and juice of 1 lemon
- 2 large handfuls baby spinach leaves
- a handful fresh basil leaves, finely chopped
- 1 sprig fresh rosemary, leaves minced, stem discarded
- about 2 cups freshly chopped parsley, some reserved from garnish
- 2 Tbsp tomato paste
- 1 Tbsp worcestershire sauce
- a splash of Shiraz, or your favorite dry red wine
- olive oil
- kosher salt & ground black pepper
- freshly grated parmesan, for garnish
