Ingredients
- 4 tablespoons olive oil
- 3/4 cup onion, finely diced
- 1/4 cup diced green bell pepper
- 1/4 cup diced red bell pepper
- 1/4 cup diced yellow bell pepper
- 1 teaspoon sliced fresh jalapeno pepper
- 2 cups chopped fresh tomatoes
- 2 cups cooked black beans (better if you cook 'em, but can beans may be used)
- 2 tablespoons fresh lime juice
- 1/2 teaspoon sugar
- salt, freshly ground pepper to taste
- NOTE: the recipe does not call for garlic, but may add fresh minced garlic
