Horseradish Crusted Cod With Lemon Roasted Potatoes Recipe

  • 2 Tbl minced fresh parsley, divided
  • 3 Tbl drained prepared horseradish, divided
  • 3Tbl reduced fat mayonnaise
  • 1 Tbl Dijon mustard
  • 1 Tbl lemon juice
  • 4 Skinless cod fillets, about 6ounces each, 1 1/4 to 1 1/2 inches thick
