• 2 cups of shredded pepper jack cheese
• 1/4 cup of minced pimentos (or use fire roasted red peppers, if you have them)
• 3 green onions, white part only, minced
• 1 garlic clove minced
• 1 1/2 tsp of smoked paprika
• 1/2 tsp of white pepper -aesthetics only, I don't like black specs in my pimento cheese
• 1 finely minced fresh jalapeno, seeds and ribs removed
• 1/4 cup or more best quality mayonnaise

Made This Just For Me. I Love Pimento Cheese And Usually Just Purchase Some, But It Has Become Too Sweet And Too Bland Of Late. Decided To Add A Spin Mom's Basic Recipe By Swapping Out Pepperjack For Her Cheddar And Mayo Instead Of Miracle Whip. Great
