- 1/4 cup sesame seeds, untoasted
- 1 tablespoon cracked black pepper
- kosher salt
- 3 tablespoons peanut oil, for searing (olive oil is fine too)
- 1 english cucumber, peel and cut in half lengthwise
- For Dressing:
- 2 tablespoons mayonnaise
- 1 tablespoon rice vinegar
- 1 tablespoon soy sauce
- 1 tablespoon honey
- 1 teaspoon finely grated fresh ginger
- 1 teaspoon Asian sesame oil
- 1 small garlic clove, minced
- 1/2 teaspoon Sriracha chili sauce or other hot chili sauce
- 1/4 cup peanut oil, to emulsify dressing
