A Whale Of A Salmon Burrito Recipe


  • 6 4oz salmon fillets
  • 1/3 cup blackening or cajun seasoning
  • 1T olive oil
  • 1 1/2 cups cooked wild or brown rice
  • 1. 1/2cups shredded pepperjack
  • 2 ripe avocados, sliced(an example of how, to follow)
  • 1 1/2 cups shredded cabbage
  • 6 burrito sized flour tortillas
  • For Quick mango Salsa *
  • 1 can original Rotel tomatoes, or similar, drained
  • 1 ripe mango, diced
  • 2T fresh cilantro, chopped
  • juice from 1/2 lime
  • For Chipotle Mayo *
  • 1 cup sour cream
  • 3/4 cup mayo
  • 2 chipotle peppers, finely diced plus 1T adobo sauce
  • *both can be made the day before
