Cincinnshires Recipe


  • For Slow Cooked Cincinnati Style turkey Chili
  • 1lb ground turkey(the Devonshire traditionally uses turkey, so I decided to use it in this chili....and it was excellent :)
  • 2 cloves garlic, minced
  • 1/4 cup dried minced or grated fresh onion
  • 2T chili powder
  • 1t ground cinnamon
  • 1t ground cumin
  • 1t cayenne pepper
  • 1T unsweetened cocoa
  • 1 bottle Heinz Chili Sauce(12oz)
  • 1 can tomato paste(6oz)
  • 2T worcestershire sauce
  • 2T red wine vinegar
  • kosher or sea salt and fresh ground pepper
  • For Cheese Sauce
  • 1/2 stick butter
  • 3/4 cup flour
  • 1/2lb cheddar or colby cheese, grated
  • 2 cups half and half
  • 2 cups chicken stock
  • kosher or sea salt and fresh ground pepper
  • For Sandwich completion
  • 9-10 pieces thick cut hardwood smoked bacon, cut in half and cooked crisp
  • about 1/3 cup fresh grated Parmesan mixed with a touch of paprika or cayenne(I used cayenne :)
  • 6 large slices bread, crusts removed(optional)--I used a nice rounded loaf of Tuscan bread and it worked great
  • fresh tomatoes, sliced(optional)
