Chopstick Chicken Salad With Ginger Soy Dressing Recipe

Ingredients

  • DRESSING:
  • Make dressing and refrigerate 2 hours or overnight.
  • 1 1/4 c white wine vinegar
  • 1 1/2 c sugar
  • 2 T kosher salt
  • 2 t coarsely ground black pepper
  • 1 T salad oil
  • 1 T minced fresh ginger
  • 1 t sesame oil
  • 2 T soy sauce
  • SALAD:
  • 3 c mixed greens
  • 1/2 head iceberg lettuce, cored, shredded
  • 2 Boneless skinless, chicken breasts ( or 8 oz cooked chicken breasts )
  • 1 c crispy chow mein noodles
  • 1 T freshly chopped cilantro
  • 1/4 c red bell pepper strips
  • 1/2 c celery sliced into 1/8 x 1 1/2 inch strips
  • 1/2 c sugar snap peas or snow peas cut into one inch pieces
  • 1/2 c dressing
