- 1 head broccoli, chopped to small florets
- 1/2 head small red cabbage
- 2 carrots, in small slices
- 1 green pepper, chopped
- 2 mild peppers (like poblano) chopped
- 3 stalks celery, chopped
- 4 large mushrooms, sliced
- 1 container grape or cherry tomatoes
- 1 can chickpeas, drained and rinsed
- 1 cup olives, pitted
- feta cheese
Description
This Is A Great Non-lettuce Salad That Will Last For Awhile In The Fridge Without Getting Too Soggy. I Originally Saw It As A Taste Test At Jungle Jim's Market, And Decided To Spice It Up My Way For A Great Mix. Not To Mention, Its Pretty Healthy!
